Mexican Superfood Bowl

Now, we’re not trying to be the Spice Girls or anything, but we are well and truly ready to ‘Spice up your life’ with our new Mexican range of dishes. Our Mexican Superfood Bowl is vegan AND gluten free and is super yummy. In true Bite Club fashion, we’re going to give you the nutritional breakdown of each and every ingredient which goes in to this colourful and spicy dish.
Chickpeas
Everyone may frown at a so-called ‘beige diet’, but chickpeas are a beige superfood which you should try & eat regularly! They are rich in insoluble fibre, which is great news for your digestive health. They help to move waste through gut which reduces the risk of pesky conditions such as constipation.

Jalapeno Peppers
Jalapenos are a great source of Vitamin C, which is fab at keeping your immune system in tip-top condition. Vitamin C prevents cell damage which can be caused by free radicals. They are also great at adding some fabulous flavour and a little bit of heat to the delicious Mexican Superfood Bowl!

Kidney Beans
These beans are apart of the dried legumes family and are a fab source of soluble fibre! This may help to reduce the risk of heart disease. Kidney Beans contain isoflavones (oestrogen-like phytochemicals) which can potentially reduce the risk of prostate and breast cancers.

Quinoa
This grain is gluten-free and is a great source of manganese (a mineral which helps keep your blood, brain, and nerves healthy). Quinoa is also great to include in your diet during flu season, as it is a source of zinc, which is needed for our body to maintain a strong immune system.

Edamame Beans
These vibrant beans contain more protein than other beans, and are rich in Vitamin K, which helps our bones to absorb calcium. Vitamin K also helps our blood to clot properly.

Peppers
Peppers are great for boosting your immune system, and strengthens bacteria and virus-combating white blood cells.

Onions
Onions may make you cry whilst cutting them, but they’ll make you cry with joy when you know the health benefits! This veggie contains a type of fibre which acts as a probiotic, which encourages the growth of friendly bacteria in the bowel.

Green Lentils
Lentils provide a constant release of energy throughout the day, this is because they have a low glycaemic index (GI) which means that they break down sugar slowly.

Black Beans
Black Beans are high in fibre, which helps to maintain our bowel health as well as lowering our cholesterol levels. They are a great source of manganese, which helps many chemical processes in the body such as energy production.

Sweetcorn
This veggie is rich in nutrients, such as the antioxidants lutein and beta-carotene. These are carotenoids which give this vegetable its distinctive colour and may prevent eye diseases.

Tomatoes
Tomatoes are full of carotenoids (a group of phytochemicals) which may help to reduce the risk of heart disease and stroke. The carotenoid lycopene, which can be found in tomatoes, may also help protect against cancer.

Chilli
Chilli has lots of super benefits for your body! It is high in Vitamin C, an antioxidant which is fab for wound healing and your immune system.
 

Nutrients

Our Mexican Superfood Bowl is packed with nutrients, which is a great contribution towards your RDA (Recommended Daily Allowance).
To begin with, it contains 110% of your RDA of Vitamin C. Vitamin C protects cells that make up the immune system, as well as boosting the action of bacteria and virus combatting white blood cells.
It also contains 78% of your RDA of Potassium, which helps the transmission of nerve impulses and helps to keep your heart beating. Potassium also helps maintain a healthy blood pressure, and may reduce the risk of stroke and osteoporosis.
